  • Bigos… What the heck is “bigos”???

    Easy guys 馃檪 Do you like a stew fellows? Well, that’s what’s bigos is. It is a stew. It is called a Polish Hunter Stew – this name is probably more descriptive and gives a better idea about the dish.

    So, if you’re a fan of an Irish stew or any type of a stew with meat and mushrooms, you’ll quickly become a big fan of bigos too! 馃檪 The dish is said to be 700 years old and initially was cooked with a wild game. However, fortunately or not, we’re not hunter gatherers anymore. Humanity turned itself into token of exchange hunters nowadays, which are notably called the “money”. So essentially, the more money you’ve got, the more ingredients you can get and the more bigos you can eat… 馃檪 Wow… One deep thought that is… 馃檪

    Anyway, back to bigos, it really is one tasty Polish meal which can fill up your tummy. Traditionally it is one of the Polish Christmas meals. Although, in the 80s and 90s bigos became one of the most popular Polish bar meals.

    The secret ingredient of bigos is the sauerkraut. Yep, that good old, full of vitamin C and and gut friendly probiotics fermented cabbage 馃檪 Unlike in other types of stews, it is the sauerkraut which makes the main body of bigos. You might wonder now, how on Earth this dish could ever be tasty? Well, the secret of bigos’s great taste lays in cocking the sauerkraut with smoked sausages (you could use bacon too) and dried wild mushrooms. To improve the taste you could even add few prunes. While cooking, all the ingredients absorb and infuse each other distinct flavors, mixing together in hot temperature and then – voil脿! Here comes the one of the most tasty stew ever! 馃檪 Hungry yet?   • About “Ogorkowa” – Polish pickle soup.

    The name “Og贸rkowa” which is Polish pickle soup you could really translate to English as cucumber soup. It’s just that when you cook it, you use use the pickles, not so much fresh cucumbers, so “pickle soup” is probably more exact name for it. Although, I do think cucumber soup sounds more straight forward. Just like tomato soup or cauliflower soup. When you say Polish pickle soup, I personally react to it like: “Say what…?” 馃檪

    Regardless of the naming conventions (choose the one which you prefer), Og贸rkowa was the favorite soup of my childhood. Every time it was served I wouldn’t just eat it. I would rather devour it. It was that delicious. My parents were joking that while I was consuming the soup with fervent moves of the spoon, even my ears were shaking 馃檪 I could never get enough of it. Until one unfortunate event…

    Well, one day mum served og贸rkowa. I couldn’t be more excited. So once the plate landed on the table in the front of me, I started consuming the soup withe the usual passion.

    To make og贸rkowa, you need to use chicken (wings or other bone-in parts). Unfortunately, some little chicken bone ended up unwanted in my plate. Devouring the soup spoon after spoon, I failed to see the bone, swallowed it and chocked on it badly. Gosh! I felt it in my throat and then being a little kid, I really thought I might die. Well, I didn’t. My parents rushed to help me, patting me on the back and calming me down. I either managed to swallow this piece of bone or spitted it out somehow. I don’t know. I only knew it was gone. From then on I could eat og贸rkowa no more. I just couldn’t. I completely lost appetite for it. Until my last visit to Poland.

    When I went to see my mum, a neighbor came over with the pot of og贸rkowa soup. I mean, decades after the incident, my fear of og贸rkowa long evaporated. I set down at the table, served myself a portion and started eating. Well, what to say…? My ears were shaking again 馃檪
